I just saw Giada make sub-type Italian sandwiches.
She grilled the meat on the bbq, along with some thick, purple onion slices that she'd put olive oil on.
She also took long rolls and gave them a little butter and garlic, and warmed them on the grill.
While the meat was resting, she made a chunky "dressing"...it was oil, vinegar, rough chopped olives, capers, fresh tomatoes, jarred red peppers cut up, cornichons - those tiny pickles, and the grilled onion that she chopped. I may be forgetting something, but you could add what you like, such as fresh red bell pepper.
Then, she sliced the meat, and tossed it in the bowl with the 'dressing.'
Then, she put slices of white cheese on the rolls, then some arugula. I would say that lettuce would substitute.
Then, she piled on the meat mix.
I think that it sounds great, as you can customize it to your taste, and what you have available. And, you can use your grill in the heat, or cook it indoors.
Some other ideas might be to add some artichoke hearts, some parmesan to the mix, grilled/cooked asparagus, other pickles, or even other pickled vegetables, etc.
The 'dressing' can be a jarred or homemade vinaigrette, or mayonnaise based dressing. Even jarred, such as ranch, or other creamy dressing. What about a little bbq sauce? It won't be Italian, but it would be good with the meat!
And, if you go light on the dressing, you could spread some mustard on your roll, too! I would probably do that!
What would you put in it? I think that this is a do-able meal!
