If you wanted to have healthy snacks in the 'fridge each day, what would you make/have?
(Uhm, let's make them gf, legume, dairy, and nut free, for argument's sake, lol!)
I've been thinking of a rotating protein, such as chicken and broccoli (I like it leftover cold.), chicken legs, hard boiled eggs, and when I have meat, burgers to eat just like that.
I may be thinking too big, with the cost of meat and chicken, so maybe more eggs.
Black olives...every day.
I don't eat many cold carbs, but I do like chips, which made me think that I could make tortillas and cut and flavor them for the next day.
Also, maybe sweet potato fries or chips.
All of the carbs seem to be more work because they aren't kept for too long. More work = more cooking in the heat, and using more gas. I'd like to make a week's worth of whatever it is, or maybe 4-5 days.
I don't want to lean on sweets too much, but maybe I could make some ginger snaps for between-meal carbs?
I've also thought about muffins for a once-a-day tea break. Sweet potato-orange and blueberry-lemon come right to mind.
Anyway, this is where I run out of ideas. Unless...
I may be brave and try the Sunbutter. I'd have to test each jar, since they aren't being as transparent as they should be, but mostly their product is good. If I could eat that, I could make crackers to spread a little on each day. That would be sooo helpful!
Any other thoughts?
