That sounds delicious! We had 'potato night' for years, once a week. We offered all of the choices of toppings, including some leftovers, like chili.

Twice baked potatoes freeze, and reheat, beautifully. Mash cooked potato filling with butter, sour cream, cheese, salt, pepper, onion and garlic powder if you like it, optional chives or green onions, and bacon if desired. Oh, and I sometimes added sautéed broccoli, cut into small florets.
Re-stuff the potato shell, and bake until done, but not-too-dark on top. Cool, refrigerate overnight, then wrap well and freeze.
At the end of re-heating, get the top browned.
