I made fried catfish and onion rings this week. I used a tempura batter and I coated the fish, dipped it in flour and then dipped it in the batter again. DH said there was too much batter on the fish. I did a couple of the onion rings that way and then just dipped the rest in the batter before putting in the fryer. DH said the onion rings were really, really good...better than he'd ever had. I might use a different batter ext time.
