It was not an exciting food week, but tasted good.
Unfortunately, I made a mistake, thinking that Father's Day was next weekend, when it's actually today. Luckily, Dh doesn't mind either way, but I had planned food around it.
There were only 3 smaller packs of chicken at Safeway. I got one, Ds got one, and the 3rd didn't look good.
I had leftover chicken from Friday, because I split a pack. One half I made with broccoli, the 2nd half I made into the one-pan dish with rice last night.
Ds came over to help Dh with the fence around my little kitchen garden up the hill for less than an hour. So, we are having whatever leftovers that we want. Dh said that he will have leftover tortellini's that I can't have, and I'll have leftover chicken-rice dish. That leaves tomorrow open for the pack of chicken tenders.
I want to make 3 things, so need to choose. Either chicken pot pie, strips with the 2 sweet potatoes that I have, or soup.
I have pretty much ruled out soup, not having my freezer down here.
Probably, I will make the pot pie, so that my celery doesn't go bad. Usually, I make more than one thing with celery, but this is pretty small, so I want to use it for pot pie.
I have onions and carrots, as well as canned corn, so hopefully that will do, with the right flavors.
Actually, I have considered not making it into an actual pot pie, just pot pie-like, a bit thinner. Then, making dumplings to go in it. We'll see tomorrow!
Also, I found some all beef gelatin, and want to make (if you don't like jello, cover your eyes here.) some homemade jello.
I have some concentrated juices, and want to try it. I made some once before, using a vegetarian gelatin, because I couldn't find any other kind that I can eat, and it failed miserably. Oh, it set, but it was quite solid!
Actually, I wanted the gelatin for health reasons, but when it came in, and I have the concentrated juice...well, it's like a moth to a bulb!
