We didn't have a bad week, even though I didn't get the chicken that I was counting on for my meals.
I had broccoli (I wanted some for this weekend, but there was none to be had.), and wanted to make chicken and broccoli. I use ginger, and really like it.
But, I had broccoli, and no chicken. Plus no meat. I have one very small piece frozen, and that's it, so am saving it, probably for this coming week. It will make 2-3 meals if I'm careful.
So, I was trying to think of a protein source. When you can't eat beans, nuts, etc. you are very limited. All I could think of were eggs, but the idea of another fried egg was a little depressing.
That's when I got the idea of cooking the broccoli the same way as I would with the chicken, sans the ginger, and serving it over rice. Then, I could have eggs on the side.
But, I didn't want fried eggs. It was better with the stir fried broccoli over rice, but still...
So, I hard boiled some eggs while I was chopping up the broccoli.
When they were done, I cooled them, and, before cooking the broccoli, I made egg salad, and let it meld in the 'fridge while I made the rice (no rice at the store, by the way.), and sautéed the broccoli.
The broccoli tasted good, but in the end, I finished it with some lemon juice.
Anyway, it was an odd meal...broccoli stir fry over rice, and a scoop of egg salad on the side...but somehow it worked, and was good. I might just be lucky that both things came out well, which helps.
I ate my last sweet potatoes this week, and they were quite good. Not this week, but next week, I will try to buy more, if they have them!
