Baking soda with vinegar will give you a yeast-type rise.
At least you can freeze real butter. Depending on how long you want to keep it, give it extra wrapping. I bought a case of butter once, and we ate it over a year's time, or more. It was fine.
I hate it, too. We never eat our critters. :-(
