Tortillas, beans, cheese, and apple juice sound like a good breakfast to me.
Like me, I see where you've been repeating meals more than usual. Ds has been doing the same as you with refried beans and tortillas (ddil told him, yesterday, that she would not like another burrito.) because it's affordable, he doesn't mind eating them, and they have had beans at the store.
The salads sound great!
Did you make the cherry pie with a can of the pie filling?
Yes, our weeks were similar.
After I posted Sunday's post, I found that Ds got us 3 very small steaks to go with the roasts, so that we could eat something before the first roast thawed, and the same other days. They weren't for eating as steaks, but for slicing or grinding. They thaw in an afternoon.
Dh went to thaw one that first night, and when the frost left the front of the package, he saw something that no one could see with it frosted...that they were marinated/flavored, and contained soy oil. :-( They've never had a marinated product before.
The 20 year old who was at the counter wouldn't let Ds get meat from the back, where the woman who usually works there keeps the kind that we buy. He said that he had to sell the steaks in the front first. Well, they are marinated, and he probably didn't even know that.
In one way, it's a relief, since we will either return them, or Ds will take them. That means that I will be refunded $'s I didn't want to spend to begin with. Sometimes, when someone else does your shopping, something goes awry.
But, in another, it's very annoying that they were insisting that we buy something flavored over a plain piece of meat. Dh wants to be the one to call there. Uh, oh.
The place used to be run by a very nice older man, but his son has since taken over, and there's a Dd that we spoke to once, also. Does everything have to be difficult? Sheesh.
Anyway, just a little update. But, the roast is good. A little tougher than usual, but fresh and with a good taste. It will lend itself well to longer cooking in liquid, such as stew. I'm also thinking of pressure cooking some - once the reg. gen is working again - for shredded burrito meat! :-)
If it's further thawed tonight, I would like to take some, and make a sort of cheesy mac, at least for Dh's portion. Ground meat, garlic, onion, corn, greens, black olives, penne, and Mexican spices. I can't believe that I have everything in the house at one time...just like a few months ago! A one night 'tasty and normal' meal before I start making stew to freeze.
Have a good, and healthy, food week!
