The lack of veggies was there, but, it is what it is. You have to first have them in the house. Now you have fresh produce, yeah!
Unfortunately, we aren't eating as much produce as we should/want to. I'm such a huge vege person, but first prices began making them almost impossible, now shortages are just making that worse.
We're working on it. I'm the person that fed my family no less than one vegetable a day...and often more than that, either because I made a green and orange one, (or a hot vege + cabbage salad or some such.) or because I made one-skillet meals, casseroles, or stir fries which used several at a time.
Lately, stir fry is a treat instead of common in the meal rotation. I try to make chicken and broccoli once a week...since there's no meat...but that's not often enough. I'm hoping that, if we just hold on, we'll have homegrown from the end of summer on. Hoping...!
Oh, I need to send you a letter about that. I'm being cut offline a lot the past couple of days, so it may take a little bit, but I will get to it. Perhaps, if offline, I can type it into a document, then when I am online and not rushing, I can copy/paste it into an email!
