I cook them, but don't over-cook them, drain them, put them back in the empty pot on a low heat. Then, when they are dried off, I add butter and lemon juice, maybe a sprinkle of salt. Melt/heat, and serve immediately.
I use a lot of garlic and parsley, too. When ddil was pregnant, Ds and I would split bunches of parsley to put a bit on/in as much as possible, because it's so nutritious.
Yes, peaches are delicious. I liked them with cottage cheese, just fresh, in ice cream, or in my peach upside down cake. Actually, I can't think of anything peach that I don't like!
