I've had to think fast on my feet. All of my food plans used a combination of my electric pan, my counter-top oven, and my single burner.
Now, with 8 lbs. of meat to process in 2 days, I'm down to the burner, and a medium sized pan, only. Oh, and some chicken, which must be done today.
I'm cutting the meat meals down to just 2 types, plus a peripheral meal or 2, and just making more of each.
When it's done being cut up, it won't be 8 lbs. Some will be dog/cat food, but even if it's over 7 lbs...
I would say that I can cook 1/2 lb., max, in the pan, if there are no vegetables in it. 1/3 of a lb. will cook it better. (Can you tell that I've been giving this thought?) So, that's 14 - 21 batches, if it was just 7 lbs.
The vegetables will have to be cooked first, separately, and also in batches.
With the small burner...the larger one won't work right now, it's slow going, but will work with time. I have a harder time browning food in this pan/with this burner, but I'll do my best, and just wash the pan between batches.
The only thing that I'm really unsure about, is that the pan's sides are low, so adding much liquid to it for stew/soup/chili may not work well. I might get it all browned up, then transfer to a saucepan, and add the liquids and thickeners to it. I'm just calling it an adventure, so that I don't give up.
I saw a flat, herby bread on T.V. that is cooked in a skillet. I don't know how it will come out with gf flour, but since I won't be making bread any other way right now, I may try it this coming week, just for something different. Especially with my cornbread plan not happening now.
I did almost no shopping this week. I got Dh some cheese, me some more black olives to take my pills with, and a couple of bottles of water when they had it at Raley's in the next town over. I was going to get myself a grapefruit, but there were none.
