I made a small amount of chicken broth this week, and we agree that it may have been one of the best.
One day we just had it as chicken noodle soup. It was a cold night, and really hit the spot.
The next night, we had chicken salad.
The following night, we used some for brothy rice.
Now, I am going to freeze the last 1 cup-ish to make noodle dish with when I run out of meals. I have noodle dish starter in the freezer (thank goodness for the new 'fridge!)...just add pad Thai noodles!
2 nights we had eggs with spiced masa. The chickens are laying, so...!
I have lots of ideas for this week, but am going to try not to overwhelm us with cooking marathons.
I have blueberries to use, some apples getting too old, one chicken breast, and tenders.
My thoughts are...1 - more ginger chicken-broccoli, 2 - air cooking herby chicken with sweet potatoes (the sweet potatoes can't be kept much longer, either, so I want to use them.), and waffles.
My thought was to finely chop the apples and cook them with the blueberries, sugar, and vanilla. When I have a thickish, but pourable, syrup with solids in it, it can be used to put over waffles or pancakes. This time, I'm going to make some for myself, too, even though they aren't great with this flour. It's been a long time since I've had either. Again, we have eggs, so...!
I have other ideas, but think that I'll get through the 2 chicken dishes, and the waffles/pancakes first.
There are bones with meat on them in the freezer, and I would like to make a beef broth with them at the end of the week. If we do, then the meat part could be eaten with tortillas, and the broth used for anything. If I can get more onions, maybe an onion soup?
But, whoa Nelly, first get the other dishes, and the fruit, cooked!
I heard once that Whoa, Nelly came from the Roy Roger's Show, and Nelly Belle the car on it. :-)
This week, Ds got me chicken (yeah! They have only had it on and off recently. There's no meat in the store, he says.), including legs, which I haven't had in months and months, 4 oranges and a lemon, onions, broccoli, blueberries, olives for my med times, and rice. They had no sugar, water, or much else that I can use.
About the rice... They didn't have much, but they had this one. It's a boiling bag, that takes 10 minutes. It's put out by the people that put out Minute Rice, and is Jasmine rice. There were no cross-contamination warnings on the package, and I can eat Minute Rice, so we will try this package, and see how it goes.
We have cut back on rice since Ds moved out. We eat less overall, even when we eat it, but we do serve it with things like stir fry. We used to keep a lot of it, but with the 'fridge going bad, and Ds not living here any more, we just slowly finished off what we had, and bought less. What was I thinking? Obviously I wasn't. Ack! But, this is going to be interesting. I'll let you know how it is once I try it!
I plan to make a pan of sticky chicken legs for lunches. I'm really looking forward to it!
