First, she dropped in a couple of chicken breasts, which she sprinkled with salt, pepper, chili powder and cumin.
Then, on top of them she put:
2 large cans of tomatoes, w/ juice. One was tomatoes and chilis.
1 can of tomato paste.
1 can of black beans.
Some very finely diced onion.
" " colored bell peppers.
1 chipotle from a can. I'd call that optional, depending on your pantry and taste.
Then, she cooked it on high for 5 hrs.
When that time was up, she put 2 forks into the pot and shredded the super-tender chicken.
Then, she topped it with the juice of 1/2 a lime.
She served the bowls with a variety of toppings for people to choose from, such as shredded cheddar cheese, sour cream, crumbled tortilla chips, etc.
I think that it would also be good with any of the following, depending on your taste.
Whole kernel corn, canned or frozen.
Black olives, slice if whole.
Pasta. Make however much you want, on the side, al dente. Then, put some in the bowl, and ladle over the soup. Rotini/corkscrews, elbowa, or shells would be nice. That makes it a complete meal, including carbs. You choosing how much pasta to add makes it suit each person.
If pasta's not big at your house, you can serve with tortillas on the side, bread, rice...add to your own bowl by how much you want, or even potato salad-sized par-cooked potatoes. You can put them in for a short cooking time, to allow the flavors to infuse, or serve to each bowl.
