When I am thinking about meals for Ds, and he has frozen mixed vegetables, I usually come up with:
A pot pie.
Shepherd's pie.
A quick soup with various things in it.
Or, and especially if the frozen veges are 'stir fry veges' a ramen bowl...either dry bowl, which is meat or chicken, veges, noodles and an Asian sauce, or else a soup with pretty much the same, only with a soup broth.
I like to add the mixed veges to cooked ground meat, with a condensed soup or not...you can make a gravy if you don't have it, or a cheese sauce...and have it with mashed potatoes, or good bread.
Beans make a good fall back. Smashed with tortillas, in soups, as a side, etc. etc. Good to have on hand!
If you make dry beans, like pintos, you can add cooked ground meat and onions, and a can of tomatoes, or sauce. I imagine peppers, too. I wonder if canned beans would be as good that way?
That's good about the water. Ds got me 6 qts. yesterday in Ukiah, but they were almost out again. Not having water/enough water is one of the more stressful things for me.
