Here's a funny thing that happened...I was going to show Dh a photo that Ds sent of something that he constructed. While I went into my mail to get it, this page was open. Dh doesn't give a darn about what's on my computer, but I guess that he couldn't help seeing what was right there, which was your sentence:

Okay, back to where I was:
Are you using a jarred salsa? If so, you can make one that will work for after it's gone. If you have fresh onion and bell pepper or jalapeno, or whatever you like in it, and give it a quick cook, then add a can of broken up canned tomatoes to it, with the juice, it makes a good amount, and you can make it to taste by how much of everything that you add. You can also cook fresh garlic with the vegetables, or add garlic powder, spice if you like that in your salsa (some brands add a pinch of chili powder or cumin.), a touch of vinegar, or citrus juice etc. You can go by taste, and reading the ingredients of your favorite brand.
We used to eat salsa by the gallon, it seemed, with chips, and one day we didn't have jarred salsa. So, being that I had canned tomatoes, onions, and peppers, etc. I figured that the worst thing that could happen was that it would be inedible. As it turned out, it was pretty good, and I tweaked it the next time to be even better.
In the end, it made more than the jarred type, and that meant that we could have more, rather than holding back. I figured that it was healthy to eat, so didn't mind making it for us now and then.
The omelet, chorizo and eggs, and salad all sound good.
I like meat patties, but haven't had meatballs in a while. I will try to remember that for when I get meat.
I've been there with chicken, too. My solution is to use strong, distinct flavors. So far: teriyaki, bbq sauce, Italian herb, and lemon-garlic. Since I make my own sauces, I make sure that they are very flavorful. But, even changing of flavors helps.
The other meals sound good, too.
Is it that you don't care for the taste of the frozen lasagna, that you are tired of it, or something else?
I used to have a coat like that, which I loved. Maybe it will come to light after we move and unpack. It was my go-to ranch coat; a gift from my mother over 30 years ago. It had seen better days, but I wasn't trying to impress the gold finches, so I wore it anyway! :-)
