I put the juice into ice cube trays, and when frozen, I remove them, and put them into a freezer bag.
I try to fill the trays sometimes, and sometimes I don't fill them too full, so that if I need just a little juice, I have a smaller size.
Zest is delicious. I like lemon zest in many, many things, and put orange zest in a couple of things, including my sweet potato muffins.
Before I had a zester, I took the colored part off with a knife or peeler, then would cut fine with a knife.
You'll be so happy to have your lemons and limes in the freezer!
We love fish, but have pretty much given it up due to cost right now. And, we get really good, really fresh fish here, too. Ack!
Here's hoping that you get a line (ha-ha) on some really good shellfish that you love! :-)
