I add to that a lot of berries
Blueberries
blackberries
Raspberries
I have even added a mixture of all three.
I make a double or triple batch so I have plenty to freeze.
Make sure you allow them to cool before layering them between wax paper. I wrap a pack of five at a time in foil before putting in a storage bag.
I often use berry preserves that I'd make from whole berries, or use some syrup along with Smart Balance buttery spread.
French Toast - I load the egg mixture with lots of cinnamon also. Using preserves or syrup to top.
