I've been working on trying to have breakfast before I begin my day.
If I don't eat early that pushes all my meals forward by hours. Which means I eat late and maybe just before bed time. Which varies.
This month there has been a big change in my scheduling - as in I changed feeding times for the critters - which hopefully lets me eat earlier.
I may not have a big breakfast bur instead a hunk of cornbread/Johnny cake. Or some fruit - when I run out of bananas and or strawberries but still have pineapple - I have begun to add a cup,or two of the tropical fruit to the pineapple. It works really well. I am also grilling pineapple slices with meat.. pork, chicken. and even for breakfast. Pork sausage with sage dressing & S&P on raisin toast with peanut butter... a childhood favorite.
If I am running to the store or out with one of my neighbors I eat first and take something with me. Applesauce, pretzels, etc.
Trying to have my big meal at lunch is also difficult to do -- but working on it. Depends on how hungry I am.
Now I am having more sandwiches - which I didn't want for a long time. Also a bowl of soup works with some fruit, or tomatoes on the side.
I do need carbs - today I noticed I am out of waffles, pancakes and french toast. Add berries to the first two and cinnamon to all three.
Snacks - sometimes crackers & cheese or a dip - maybe salad dressing or salsa - which would be best.
At least I feel good that my diet is improving. But I am down a few pounds again.. between the walking and the soup... it was expected. As I haven't had much rice or pasta lately.
Also my cooking skills are returning... it was so weird to have forgotten how to cook. Nothing came natural to me since I moved to TN in 2010.. of course not having a kitchen or the use of one made the problem worse. Moving here was the first time I had my own but none of my tools or cookbooks. Most of the stuff I have now has come from Goodwill and Thrift stores, etc.
A leaning experience... for sure.
Plus I am walking alot - 10 leaps a day....or less. And this weekend I have started to run. It has been strange that I could not find my balance or my self confidence. I felt that I had forgotten how to run at all. Totally bizarre.
SO it is good to be getting my balance back once more. The path has been the best thing I have given myself.
