No, she doesn't cook at all. She never did...I feel your pain.
Apparently, her mother had some dependency issues back then, and never let her in the kitchen when she cooked, so she never felt welcome to cook food, never saw how it was done, or got an interest in it. She is an only child...there's an older 1/2 brother that grew up back east. That's what I understand.
We're at the point where she will help Ds by chopping sometimes, if he supervises, and I just heard to think of things that she can put in the oven to reheat. Baby steps? But, she can't put on pasta water and such for a couple of more months, as she's not supposed to do much of anything, definitely no lifting. Just a little longer now....early March.
That's what we've been doing so far...if there's cheese with something, by making 2 small pans, rather than one larger one, hers can have cheese on/in it, and his can be without.
I don't *think* that he can use creamed soups but, with the mushrooms, or what have you, and a roux, etc. he can approximate it.
Yes, the green chilis are very good in things like that, good idea!
Yes, he does use frozen vegetables. He started with fresh, then discovered that it was more economical to get frozen, tasty, and easier!
I don't know about at the moment, but he'd been keeping corn, peas, mixed vegetables, and mixed stir fry vegetables in the freezer. He'd been using the mixed vegetables for a quicker chicken pot pie or shepherd's pie, the corn in tamale pie, etc.
Egg dishes...good thinking!
He, at least, eats canned chicken or tuna, I know, because he takes them, in the can, into the field with him most days that he works in the field. I'll think of ideas with them.
One problem, at the moment, is that he can't have any form of vinegar. It drops his blood sugar so far down that he gets to the point of passing out. So things like dressing, mustard, and traditional mayo are out. Thankfully, he enjoys cooking, and can make mayo when he wants it, without vinegar. This is pretty recent, and hard for him after a life of eating those things.
We're hoping that when everything else gets treated, he might be able to go back to them on a limited basis.
The last day of the month he has a neurological testing appt. in Santa Rosa. He has to stay awake for as close to 3 days as possible leading up to it, then be driven there by his friend. They will be testing for seizure disorders, etc.
I like canned salmon, too. I never ate it as often as say, tuna, but enjoy it.
