Here is what I did.
In my large skillet I put some olive oil
added sliced onion, minced garlic
and three large chicken breasts
Salt & peppered breasts
allowed breasts to Brown turned often during cooking.
added diced carrots, celery & anaheim, red, gold & yellow peppers
added some Balsamic vinegar
Parsley, and Herbs De Provence which is:
Marjoram, Rosemary, Thyme, Savory & Lavender
stirring veggies often
Tossed in some white wine
some water
Covered and Stirred as needed.
I will freeze two of the breasts and have one for dinner tonight With the mixed veggies, mashed or baked russets. A salad of some kind - romaine, Romas with blue cheese dressing and croutons.
Easy peasy... this didn't take long at all.
