I'm helping Ds to come up with a menu that's affordable for them for the rest of the month. December is his lowest pay month for his job, he missed some days when he had the flu, and ddil is off of work now, with her problem pregnancy.
He is gf, and dairy-free. There's a non-dairy cheese that he likes a lot, but it's really expensive, so not really an option. However, ddil can have gluten, and she eats cheese, cream cheese, butter, and sour cream.
Spices and too much tomato product, like spaghetti, gives ddil horrible heartburn right now, at this stage of her pregnancy, so they keep them to a minimum.
Oh, and mushrooms are not too pricey right now, and they like them in spaghetti sauce, etc.
Also, Ds does the cooking, and he works, so he only makes long cooking meals on the weekends, or office days, where he makes maps, rather than being out in the field.
Maybe someone has ideas?
So far, I've come up with beans being cheaper than meat, and one chicken here is less than meat.
Vegetables are expensive, though necessary to a point, so I've entertained soups, a meal salad, tostadas, spaghetti if ddil is up to it, etc.
Anything that makes 2 or 3 nights of food is best, since Ds works.
Any good thoughts for low cost, low time, meals?
