Our week was a mixed bag. I was given back some money that I was owed, so I bought some chicken tenders and vegetables.
One night I made a chicken and broccoli dish, and it came out soooo well. It doesn't sound like much, but it was more than the sum of it's parts.
I made food with chicken and vegetables 2 more nights. One night, I made lemon-chicken, which we had over rice. I browned the chicken bites, sliced garlic, salt, pepper, etc. then added lemon. While I was cooking, I remembered a handful of chiffonaded greens...specifically collards, but I recommended spinach to Ds for ddil, because she really likes spinach...and tossed it in at the end, until it cooked, which doesn't take long. It wasn't a lot, but it was good in it. I like lemon chicken anyway.
And, finally, on Christmas Eve, I was taking my bounty of vegetables, and getting ready to make a stir fry. That's when I heard that Ds was going to go over to his in-law's house the next afternoon for their dinner.
I can understand ddil wanting to go and see her family, especially her sick dad, but Ds still wasn't 100%, and they weren't making gf food.... So, she suggested that Ds bring something to eat of his own.
He was feeling pretty horrible, and couldn't imagine cooking, so I asked him if he wanted stir fry to take...I didn't mine giving him part of ours. He said that maybe he'd cook it with leftover rice into fried rice.
So, I changed my idea and cut things a little smaller, for fried rice, and he said that he'd be here at noon, as they were eating at one or 2.
In the end, people came from 130 miles away, so he was there longer and longer. Finally, near our dinner time he got here, and wasn't going to eat with them after all. So, I asked if he wanted to eat with us. And, he did, so we had fried rice for dinner, and played a great new game until he went to pick up ddil to go home. He was here maybe an hr. to 90 mins., which was so nice. It didn't take any time at all to heat the pre-made food, and fry it up. I was happy that it worked out that way.
That's how we came to have fried rice for Christmas dinner.
I didn't make cake or more cookies, though, as I've felt a bit under the weather myself. I might make something like Christmas cake for New Years, but I'm not sure about that yet.
I've got enough chicken to make a small pot of soup, since I've nowhere to put a lot. I will make some mugs of garlic-broccoli-ginger soup, with Thai noodles. That helps when you are sick. The rest of the broth can be for 1 more time of some type of soup, or brothy rice. I'm leaning towards soup.
