One were roasted tomatoes. She was serving them at a brunch for friends, but said that you can make a great sauce or pasta dish from them by mashing them, or putting them in the food processor. And, she served them with an herb drizzle. They looked really good, and I'm sure could be used for many things. She served them on the side of a bagel dish. (Follows.)
She cut roma tomatoes in half, and put them in a bowl where she put olive oil, salt and pepper on them, and tossed to coat well.
Then, she put them on a sheet pan with a lip, cut side up, and baked them in the oven at 400 degrees for about 30 mins.
Meanwhile, she made the herb drizzle. She put in her small food processor: Some fresh basil and oregano, the juice of one lemon, about 1/4 C. of olive oil, and a little salt and pepper. Whirl it up for a few seconds, and voila!
She also made a new take on Toad in a Hole. But, instead of cutting a hole in a piece of bread, she used a small, round, cookie cutter to cut a larger hole in halved everything bagels.
Then, she brushed melted butter on the cut side of the bagels, put them cut side down on a sheet pan, then buttered the other side. You could use olive oil, too, of course.
Then, she broke eggs into the holes, one per, salt and peppered them, and put the tray in the oven at 375 for 12 mins.
Oh, and she put the cut out holes on the tray, too.
She served hers with hollandaise sauce, after adding smoked salmon, capers, chives, and red onion to the top, but that's all optional of course. I also think that you could make them in a pan, and flip them, but am not sure how they would come out.
