In my restaraunt it is at the server's discretion whether or not to add the grat. It does say in our menu that parties of 8 or more will get a 15% grat. added into their check. Based on this, I always grat big parties with sep. checks, and the rest I just use judgement on, I usually ask the person who is paying the bill if they want it added.
As for the regs who stiff, we give them the same service as anyone else, one thing to remember is that these people often recommend your rest. to their friends, who will most likely be better tippers!!!
