I don't know if these hikers you talked to HAVE to resupp that often, but it's nice on a long-distance hike to eat in town reasonably often to maintain some body weight (I lost 40 pounds on my AT thru-hike, and I had just gotten out of the Marine Corps, so I was NOT dramatically overweight when I started. But I finished emaciated.)

With my Mountainsmith Ghost, I can stow 5 days of food and gear for snowpack in the rocky mountains, late spring through early fall. In Tennessee, where I live, I can probably pull off another day or two of food, since I carry less clothing/layers, a lighter bag, and a bit less food per day. Even with two quarts of water, I still never exceed 30 pounds. So yes, it's very possible not to have to hit a resupply for nearly a week.
