Probably the most advanced, most active semi-automated game out there, although maybe I just like to toot my own horn, ha ha. Seriously though, we have an automated registry, bank and content management system and will shortly have a set of in-house randomizers which store show results because I'm chronically lazy and would rather do the coding once than have to collect show results repeatedly.
I don't know if we fulfill your qualifications for simplicity, although if you're an adult at a high school reading level it isn't too hard to figure out, but most of our members are older and have been playing for a long time. We're always open to new ideas and new people, and have a burgeoning H/J scene as well as a very active eventing scene, racing scene and growing dressage and western circuits as well - and of course, we have a well established Arabian base 
. We're also open to dogs, and although they're not a requirement by any means, they provide an opportunity to branch out a little.
Being a well established game, there are generally a lot of well shown horses available to purchase or adopt, which I always find to be a bonus. We also put a lot of emphasis on RL lineage in horses, so there's also good opportunities for your created horses to blossom.
