Hi SLPCa,
I too am 1st year and am going through the same thing. Heck, some of my kids aren't even balling up their hands to hold my PCS symbols. I've decided to go to real objects rather than the symbols for now to try to get some success there. I've had some success with more concrete items like assisted scissors (it looks like a spring loaded scissor that sits on a device kinda shaped like a stapler) and use of crayons. Most activities start with hand-over-hand but if I push enough I can get a few independent uses or at least approximations before my session is out. I even give brownie points for attending to task via eye gaze.
