You can also use food items. Entice with the food item, they request with the card on the "sentence strip" by handing it to you. Then you give them some. Use small pieces so they have to request more. At first, you will put the new picture on the front of the book alone and you may need a physical prompter to prompt the student without talking to pick up the picture and hand it to you. Check out the Pyramid PECS website....it also explains the phases of PECS. It really does work..but you do need two people to teach it well! Good luck!
