Have you used a mirror and talked about what his articulators are doing when he makes a good /s/ and when he doesn't? /s/ is an easy sound to build awareness of what your tongue does when you make the sound, since it is a continuant.
I also use an old fashioned tape recorder to improve self assessment. After they read/answer a question, etc., I ask what errors they heard in their speech. We then play what they said back to see if they catch some errors that they didn't notice when they had actually said it.
