One aspect of the center position not mentioned is that he calls out the blocking schemes for the rest of the line. This is done after breaking the huddle, once the center has the opportunity to look at the defensive set. Then you see a center pointing fingers out towards the opposing defense, that is usually when they're calling out assignments.
Overall a good write-up. I agree that Castillo is probably going to be the main guy, with Reed as the back-up. Dallas Jackson, who might be 6-5, may be too tall to play center.
