I also do the timing activity...though I work with preschool they also like it! I typically do a game each session and they have to say 10-25 CORRECT productions per turn. The number depends on the child and the game. Many of my preschoolers can say 15-25 easily per turn for a total of 100-150 productions per 25 minute session. Now this is groups of two...for my one group of 3 I aim for 75 each. I tell them the quicker they say the words the quicker they get a turn. If they mess around too much they lose game next session (this rarely happens).
I also will do art activities...they get a piece to color and or glue for each turn.
Whatever we do...I have to really make sure the "real" goal is for the children to produce as MANY correct productions as possible per session. SO if I cannot alter a game in a way to do this...I don't do that game (or at least...it is not a regular game. It could be a "special" game)
