Unless my students are strictly working on carryover, then most of my artic clients are 2-3 times per week because I want to get them out as soon as possible. We generally do one session per week of drill w/ manipulatives (buttons, marbles, tokens, etc.) and one session of a fun activity.
Do you have a timer? If your kids are passed the placement stage then you might like this idea. My students get a sheet of pictures w/ their sound have set the timer to 1 or 2 minutes (depends on the age and ability). They have that alloted time to say as many of their words as possible or to use the words in a sentence, etc. They love competing with one another. We do this at the beginning of every session. Takes 3-5 minutes max and lets you get your data quick. I use the timers and hand counters from Artic Lab but you could use something else. Be sure to have them record their number and times - next session challenge to beat it!
