Do you have the opportunity to have this student and maybe 1-2 peer buddies come to lunch in your office? If you can review the "rules" of conversation w/ this student ahead of time...you could brainstorm a list (with the lunch grp) of topics to talk about over the next month that all three have interest in. Then your student and the others could take turns at introducing a topic (let the peer buddies model it first) and "leading the discussion. You could develop cue cards to intro the topic (e.g. "This weekend I ________ed, Have you ever done that?" OR "I really like _____ so I'd like to talk about that."
, maintain the topic (e.g."What do you think about that?"
and cues to end the conversation (e.g. "I liked talking to you guys about _______, thanks.) OR whatever cues you brainstorm with that student.
Depending on your other language grp members, you might be able to do some of that with the grp if others are working on carryover of their goals.
