Let me say that I regard it as my loss. I'm sure that I'm missing out on some wonderful reading experiences by mostly avoiding short stories.
That said, in answer to your question, I have the very highest regard for the short stories of Chekhov. I also admire Hemingway, Raymond Carver, and Flannery O'Connor. As full books, I think highly of Joyce's Dubliners and Denis Johnson's Jesus' Son.
More might come to mind if I thought about it longer.
