It appears as if you want to go every direction possible except that we should put our faith in God and His Word.
You asked about those who were illiterate or had no Bible. This is answered in Romans:
Romans 10:9-18
That if thou shalt confess with thy mouth the Lord Jesus, and shalt believe in thine heart that God hath raised Him from the dead, thou shalt be saved. For with the heart man believes unto righteousness; and with the mouth confession is made unto salvation...How then shall they call on Him in Whom they have not believed? and how shall they believe in Him Whom they have not heard? and how shall they hear without a preacher?...So then faith comes by hearing, and hearing by the Word of God. But I say, have they not heard? Yes verily, their sound went into all the earth, and their words unto the ends of the world.
You quoted 1Timothy 3:15, implying that the "church" is the "pillar and ground of truth".
The Living God is a title of God used in contrast to dead and false idols. (Cp Deut 32:40)
Heb 3:12
Take heed, brethren, lest there be in any of you an evil heart of unbelief in departing from the living God.
Only belief in God will give hope of eternal life. Without God, a "church" is just an assembly or group of people who will perish. They will remain in the grave.
The pillar and ground of truth is the living God.
I Tim 3:15,16
But if I tarry long, that thou may know how thou ought to behave in the house of God, which is the church of the living God, the pillar and ground of truth. And without controversy great is the mystery of godliness: God was manifest in the flesh, justified in the Spirit, seen of angels, preached unto the Gentiles, believed on in the world, received up into glory.
1Cor 3:11
FOR OTHER FOUNDATION CAN NO MAN LAY THAN THAT IS LAID, WHICH IS CHRIST JESUS.

We are not to glory or believe in men or the creeds or traditions or commandments or wisdom of men. I am sure that the Baptists, for example, also have conferences and councils to write creeds. In our little town here, there are over thirty different Baptist churches. They all profess to preach the one true creed and doctrine and yet are all different from each other in some way. Are these creeds "infallible" or "inspired" any more or less than any other creed put together by any other denomination? No. The Word is complete and is our one trusted source of truth. The wisdom found in it is the wisdom of God, not the wisdom of men.
