special ed students and speech

I work in a middle school and many of the students I work with are in special ed classes (12:1 and 12:1:1). Most of them read on very low levels. I have a very difficult time coming up with activities that are on their cognitive level and on their interest level. I am also looking for good ideas of what to work on with them-they are needy in every area and I don't know where to start. Any suggestions would be appreciated.
