Could you use sports-related vocabulary? Like ball-all, base-ace, pitcher-itcher, basket-ask it, you get the idea. To represent this visually, maybe have maniuplatives that are related to something he likes. For example, have a bunch of soccer balls that you place in a goal as he says each sound in a word, or eliminates a sound from a word.
