I don't spend a lot of time planning for the books. I try to pick ones that can be completed in a 20-30 minute time limit. I usually let the book guide me and what questions would make sense for it. Sometimes I may make supplemental materials to go with the book and use it after we have read the book. I can also get ideas from the book unit information on my website. Once you have made something or done an activity with a book the next time you use it will be much easier. Sometimes the prep to get something set up is a lot of time but then you will have it forever!
I find with books I often plan less and go with the flow. I have kids guess what may happen next, etc. Their reponses often lead me into another question or direction that I could not have planned for. I think as an SLP our best quality has to be flexibility!
Organize...hum... well maybe in somethings I am but I don't often feel this way and my desk is always a mess!
