One other book I've seen that has a speech therapy concept is "The Cow That Went Oink," by Bernard Most. It's very cute -- the cow can only say "oink", and then he meets a pig who can only say "moo." They teach each other to make the other's sound, and it's really cute how the book describes the process. In the end, both animals can make both sounds, and they have the last laugh at all the animals that made fun of them.
