Responsive manufacturers are pretty unique so it is nice to find one who pays attention.
Your point about dry-threading plastic is good too. Entirely too often you'll see plastic fittings with labels right on them telling you NOT to use thread sealants, etc... Hogwash. Dry threads easily seize up and if dis-assembly is required for later servicing you can easily snap the parts.
Which leads to another issue since you mentioned Stainless Steel. I don't know how William's SS units are assembled, but this is general information that might save some trouble down the road.
Stainless Steel loves to weld itself together when tightened, especially dry threads on nuts and bolts. Mfg who have a lot of experience with SS products will generally use a thread lubricant AND dis-similar grades of SS components to prevent this, but many don't. When using SS it is always good to use a different grade (ie 304SS nut with 316SS bolt) with a good teflon paste lubricant to prevent galling.
Brass and aluminum suffer the same issues, but we seldom see those products in Koi pond equipment.
