The betta has an interesting asian history. The tinoy likely fish, in wild form is a very delicate looking fish that lives in the rice paddies in Thailand. But place two together, especially males, and you will see the gills turn into 'shields' for the upcoming battle! It was inevitable that this tiny fish would be mixed with the local's culture. And it was this warrior personality that caught the eye of the military who would hold major events around a series of 'matches'. You can image a few getting very serious about this 'sport' and how line breeding was inevitable.
But Mike, the yamakoshi people were indeed modest farmers but the Niigata people were not all poor. In fact, due to remote location and early snowy winters, they often got off the hook when it came to paying the main political body it's tax due from recently harvested ( harvested late on purpose) rice crop. This held back rice was source of wealth. JR
