I'll take a crack at this until JR returns.
I very much believe that breeding red and white koi was not a accident. Breeding red & white koi was done intentionally. Many Japanese koi breeders interested in koi history and geanology believe this as well.
Red and White are the Japanese Emperor royal colors. These colors together are symbols of happiness and good fortune. The name kohaku in Japanese means red & white. After all the very first name of early koi breeders recorded was Hiroi who bred the first true kohakus. A white fish with red accent marks on it's back. Prior to this there were red and white carp but they were more red carp with some white patches. Often they had a solid red head and solid red tail region with some white patches on the belly or sides.
But color and pattern are simply the 1st step in developing the high quality koi we see today. Developing luster, skin texture, clear cells and clor pigment in deeper layers of skin, thick color without windows or stray bits of color speckling, long lasting color, size, stronger body frames and shapes, etc. etc. etc. were also difficult and important steps that have broght the best gosanke today to a level far above the best non-gosanke.
