I don't know that interest has run out, but a lot of ground has been well covered.
As a side note on your final thoughts I think the "psychology" of our view of Koi plays into the difficulty we may have in thinking of our swimming jewels as "dirt eaters", specifically in the properly framed context of "human waste".
Koi/Carp are an efficient scavenger/survivor species that make the most of what they have available. Scavengers are survivors because their selectivity is not based on emotion (a distinctly human trait) but rather on availability and usability. We humans are relatively poor at utilizing the food we digest which means that a considerable amount of our excrement is "pre-digested" proteins in an easily accessible form to a scavenger species like carp. When they ingest it they are taking a 2nd shot at what we missed with the added benefit of digestive enzymes already at work within the detritus giving them a leg up so to speak. Not really much different than the surface skimming of DOC's you mentioned previously.
