It is a mistake to judge Shiroji purely on the basis of "whiteness", in my opinion.
Superb shiroji can indeed be a very intense white, or it can have a creamy appearance that can be spectacular. On the other hand you can have very white shiroji that lacks depth and lustre and fails to provide a good backcloth for the other colours.
The quality of the shiroji is what is important, not the actual degree of whiteness. Good shiroji, in my view, should have an appearance of depth and transluscence.
Direct sunlight is harmful to shiroji, causing yellowing and loss of quality, but under good conditions during the winter it should restore to its former glory. Stress will also result in short-term harm, a problem for showing go-sanke. Again, under good conditions, the damage will soon repair.
Like most things in koi keeping you need good genetics combined with good keeping conditions to achieve the results you want.
