you can put a valve in the brake line which will hold hydraulic pressure after you release the foot pedal. they are often used in light airplanes and modified vehicles for convenience. if you used a ball type valve you could run a choke cable to operate the valve lever remotely. these parking brake units are available commercially for this purpose.
