narrow track vs wide wheels?

I have a set of MT 15" deep dish wheels, thanks to the local pawn shop. How much off set will work on a stock narrow track 1957, normal 8", 10" or 12" wide wheels, which will work with these trucks, any defects from wider wheels, will they hit the fenders etc???. thanks Ed
