Hi Amy - I would think the 1/500 max shutter speed would be your biggest problem. Whatever you gain from the big neg, you will loose in movement blur. Medium format might be OK for posed work, but you cannot beat 35mm for action work. The action in something like cutting can be pretty quick. If you make sure you get a good quality lens then 35mm can give very good results, and certainly acceptable for magazine use if the image is what they want. Hope that helps, Peter.
