One thing I should add--shoot using a focal length of about 105 mm. Step back if you have to. This will minimize distortion caused by shooting with too wide angle of a lens. Use a small of an aperture as you can get away with, in order to slightly blur a distracting background, if the shot is taken in a field. This will give you a better seperation of between the horse and the background, and will generally look mor epleasing. UNLESS, of course you intend to include a scenic background, in which case you would, as I'm sure you are aware, use a smaller aperture.
