Jim,
Get some breed publications and look at how they pose in there. It is for sure someone is buying the look.
Don't be afraid to ask the owner what they had in mind and if they have any photos they could show you of that they like or don't like. After all you are there to give them a service, so you may do a better job than someone with more experience if you take the time to find out what they want.
Most horses look best with one eye and the bony orbit of the other showing, but use your judgement.
