I also do language lessons with a similar group of students--only the students I work with are high school aged. I do a cooking lesson once a week with my students. The classroom teacher and I collaborate, and we plan something that can easily be made with one or two ingredients (snack mix, shakes, pudding, etc). For my part, I provide symbols, switches, prompting, ect. to facilitate communication during the activities. Cooking is a great way to target so many things...choice making, vocabulary, directions, wait time, etc. etc. And, you can easily fit it into any thematic unit. The kids look forward to it, and it can easily be adapted to fit any level.
